Breakfast can be such a daunting meal time. It sets the tone for the rest of the day and is when you decide if today you will eat healthy or give into temptation with eggs, bacon, sausage and hash browns. Something that has helped me to stay on track with eating healthy meals is to plan ahead. Some times I plan out a week’s worth of meals at a time. Other days I plan out just the next day’s meals the night before. Either way, by planning ahead I know that I have a plan for the next day so that when my stomach is growling and crying for food, I already know exactly what to give it which makes makes me a lot less likely to eat garbage.
For me, even if I just plan the next day’s meals the night before, somehow they are so much more satisfying than if I hadn’t planned and made something fresh at that moment. Because I know what I prepared for each meal, I can look forward and the anticipation magically makes my meal so much more tasty and satisfying. Somehow preparing your meals ahead of time allows you to enjoy them more, even if they are something super simple.
Most of the time for breakfast I have no idea what to do. Either we don’t have this or that, or everything will take forever to cook. This week I decided to stay on top of things and be a little more prepared for when my stomach is crying for the most important meal of the day. I wanted to make something that would be satisfying but would also fuel me for the day (or at least until lunch!) so I decided to do a little experimenting in the kitchen.
These breakfast bites came as a no-brainer for me; mix a bunch of healthy things together, add a little sweetener, bake and voila! Packed full with vitamins and nutrients, you really will be surprised of how great these taste too! And they are so portable! I love having oatmeal in the morning but with my busy schedule that’s not always feasible. These little bites are basically oatmeal on the go and then some!
- 2 bananas
- 1 cup natural oats
- 1/2 cup dried cranberries
- 1/2 cup pumpkin seeds
- 1/4 cup peanut butter
- 1/2 cup amaranth
- 1 tbs pumpkin spice
- 1 tbs honey
- In a large mixing bowl, mash bananas until smooth and there are almost no clumps
- Mix in all other ingredients and stir until combined
- Stuff cupcake tin with mixture and bake at 350 degrees for about 15 minutes. Makes six bites.
