Whenever we are running low on groceries, I feel like I’m on Chopped, competing for my prize if I can successfully use all three mystery ingredients. And today’s ingredients are….(dramatic pause)..potatoes, onion and a leek!
The clock starts now.
Okay I didn’t actually set a timer to make this, but it did come together pretty quick. Less than 20 minutes? Pretty close!
Soups are really fun to make because they are SO simple. Saute your ingredients, boil ’em, then blend! Then once you have your base, add in all your mix in’s if you’d like something a little chunkier. Okay I’ll just cut to the chase. Reasons why I LOVE soup:
1.Soups can be used in many different ways!
Remember those classic Cambell’s recipes that call for cream of whatever to complete the recipe? In these cases they are using the soup as a base or sauce to give the dish more flavor. Mix some soup with water when you make rice and you’ve got yourself some pretty awesomely flavored rice!
2.Soup…or should I say sauce?
Soups are secretly sauces (say that 5 times fast!). Certain soups can double as a gravy or a dipping sauce. Let me just remind you that french onion soup is not very different from au jus that you dip your sandwich in. Want to know how to give a hearty flavor to your meats?? Cook it in soup! Soup already has all the seasonings that you need so you are just passing that delicious flavor off to your meats. And the extra you can use as a gravy!!
3.Ain’t nothin cozier than soup!
I’m originally from Washington State even though I haven’t been back in a while, but I can still remember those wet, cold, grey, rainy days where all you want to do is curl up with a blanket, a book and a warm meal. I’m sure as a kid everyone’s favorite meal on a rainy day was tomato soup and a grilled cheese. Soup is just so warm and cozy and delicious!
Okay if you aren’t craving soup by now then I’ve still got one more paragraph to convince you! This potato leek soup is warm and cozy and everything that I talked about before. But here’s the kicker…Its SO easy to make!! Saute, boil, blend. That’s it! If you’d like to add a little more flavor depth consider slow roasting the veggies in the oven instead of sauteing or once you’ve made the soup, leave it in the Crockpot for as long as you can so the flavors get good and friendly. Feel free to add in any mix-ins that you’d like. I just added minced leek to mine but sauteed or caramelized onions would also be a super delicious addition.
And there you have it! 3 reasons why I love soup…you craving it yet?
- 2 potatoes
- 1/2 onion
- 1 leek
- 2-3 cloves garlic
- 1 teaspoon rosemary
- 4 cups stock
- salt and pepper to taste
- Roughly chop potatoes, onion and onion and saute over medium heat for about 10 minutes or until veggies are softened.
- Add stock, bring to a boil, then lower and let simmer for about 5 more minutes
- Transfer ingredients to a blender and blend until smooth
- Transfer back to pan and add salt and pepper to taste. Enjoy!
