Tropical Fruit Salad
When my husband or I have a day off from work, our first thought is where are we going. We take a vacation any chance we can get! It’s not often that both of us have the same days off, so when it comes around our bags are packed and we’re out the door in under an hour. I’m also a self proclaimed professional packer which helps to speed things along as well.
I also want to highlight that it’s not all the time that we can do this. We’re a young couple with expenses (aka broke!) so sometimes it’s difficult to justify a weekend getaway when it would be much cheaper to stay home and pay rent with that money instead.
None the less, even if we do end up staying home on a holiday weekend, we at least make an effort to make it a little special by bringing the beach to us instead. Instead of eating seafood on the beach, we’ll go to our favorite seafood restaurant in town. Instead of swimming in the ocean, we’ll go to a nearby pool with friends. It’s never quite the same as going away to the beach for the weekend, but it’s a pretty great alternative.
With today’s recipe I wanted to help bring the beach to you. Summer is on it’s way and many will be headed out to awesome vacations but also some will be too broke (…like me) to leave town. And for those troopers, I bring to you a vacation in a bowl!
This fruit salad is truly tropical, topped with lime, coconut and a little Tajin to spice things up. If you can’t make it to the beach or some tropical destination, bring that beach to you. This salad is all those tropical flavors but without the sand.
- 1/2 Pineapple
- 1/4 papaya
- 2 large mango
- 1/8 cup lime juice
- 1/2 cup shredded coconut
- 1 1/2 tbs Tajin (more or less for taste)
- Chop pineapple, papaya and mango to roughly the same size.
- Add all ingredients to a large mixing bowl and stir until well combined. Enjoy!
