When I mention to people that I am a food blogger they seem so amazed. (And rightfully so, it is pretty awesome!) What is so astonishing to these people is just the idea that I cook at home everyday with fresh ingredients and real food. I’m used to it, so maybe it is a grand accomplishment, but to me it doesn’t seem that difficult to eat a fresh homemade meal every day.
Honestly, I think this is one thing that our society could do better at, so I want to help those who are so perplexed by this idea, but have no idea where to start. Ready, set–here’s your starting point: easy vegan crock pot chili!
I love this recipe because like it says in it’s name, it’s easy! Literally, dump and go. There’s really not much prep at all (just cutting up ingredients) and the beauty of a crock pot or slow cooker is that you just dump everything in, give it a stir and come back in four hours. I love making this chili on busy days just for that reason. And even with all the chaos that happens throughout the day, I know that I can still come home and have a delicious healthy meal waiting for me when I get back. Now if you don’t have a slow cooker don’t worry! This recipe can still be made on the stove top and in under 20 minutes. I told you–super easy. What makes this recipe even easier is that half the ingredients you can find in cans. The beans, corn and even tomatoes if you’d prefer a canned variety are all ready to go.
However, as easy as this recipe is, the most important part is to find a flavorful salsa that you really like. This recipe does not call for a ton of spices so most of the flavor comes from the salsa. Since I live in Mexico I’m spoiled and use one of the locally made varieties. But there are probably thousands, so find one you like and dump it in!
Okay ready? Chili time! You can do this.
Easy Vegan Crock Pot Chili
- 1 can black beans
- 1 can pinto beans
- 1 can corn
- 2 roma tomatoes diced (or 1 can)
- 1 bell pepper diced
- 1/2 onion diced
- 3 cloves garlic
- 3 tbs salsa
- 1-1 1/2 cup tomato pure (depending on how saucy you prefer)
- 1/2 tbs cumin
- Add all ingredients to slow cooker, stir and cook on high for about 4 hours. If making on a stove top, begin by sauteing onion, garlic and bell pepper until softened. Add the rest of the ingredients and let simmer on low for about 15-20 minutes.
