The one thing that makes sure my day runs smoothly is having a breakfast made beforehand and ready to go in the morning. It’s really like night and day. Eating a filling breakfast makes me so much more focused and ready to take on the day. Lately I’ve been loving quinoa breakfast bowls. These bowls are so easy to put together and the slight nutty taste of quinoa is a perfect paring for fruit, cinnamon and maple syrup. 

In case you are not familiar with quinoa, its pretty much a wonder grain. This little grain is naturally gluten-free, high in protein, magnesium, iron and fiber. I could explain in detail about all the amazing benefits of quinoa but this graphic seems to do the trick as well.

Quinoa is most commonly seen in savory dishes, but because of it’s light flavor it can easily be served sweet as well. Honestly, when I make my breakfast I just dump half the kitchen sink in my bowl and call it good. I little bit of everything tastes REEEAL good in the morning.

Another reason that I am in love with quinoa is because, unlike many other grains, quinoa only takes about 15 minutes to cook and the grain to water ratio is simple as well. For every cup of quinoa add 2 1/2 cups of water. Super simple! Add quinoa, add water, cover and turn on stove. That’s all it takes to make! I personally prefer to make it in a big batch so then I can portion it out for the entire week. This saves me a ton of time in the morning, and I don’t have to worry about finding something healthy to eat each day when I’m still only half awake.

For this recipe I’ll try to keep it pretty simple but don’t be afraid of getting creative and adding the kitchen sink. Really the more the merrier to keep you good and full all morning long.

Ingredients

1/2 cooked quinoa

1/2 chopped fruit (anything will do but I like banana in mine)

1-2 tbs maple syrup (adjust to taste)

1/2 tsp cinnamon

1/2 tsp vanilla extract (or vanilla flavoring)

1/4 cup dried cranberries

Directions

  1. Cook quinoa according to package.
  2. Meanwhile, chop fruit an any other toppings you enjoy.
  3. Mix everything together and enjoy it while it’s hot!
