Chickpea Salad Sandwich

When it’s close to siesta time in the afternoon I have to admit I get lazy AF! I can’t be bothered to make some amazing three course meal to tide my hunger pains. The easier, the better!

I’m always super busy in afternoons and have a million and one things to get done so anything that I can do ahead of time to make the day flow a little easier is a MUST in my book.

Lately, I’ve been experimenting with meal prep and fitting all my week’s meals into ready to go containers to store in the fridge. That way whenever I get hungry I just need to microwave and eat.

BUT…like I said since I’m lazy AF I totally did not prep anything for this past week. Meal time was stressful and I definitely regret it. But one thing that helped me get through the week was this chickpea salad sandwich.

This tastes very similar to a tuna or egg salad sandwich but without loads of cholesterol or mercury. YAY!!

On the days where I’d rather not be in the kitchen and have a ton of things to do, this sandwich is a LIFESAVER. The chickpea salad comes together in minutes. Then just mash it in between two slices of bread with your favorite toppings. Lunch in minutes = stress-free afternoon

Chickpea Salad Sandwich


  • 1 1/2 cups chickpeas
  • 2 stalks celery thinly sliced
  • 1/2 cup diced onion
  • 1/4 dill relish
  • 1/2 cup vegan mayo (adjust to preference)
  • 2-3 tbs mustard (adjust to preference)


  1. Mash about half chickpeas with fork or potato masher until they are broken apart but still fairly chunky.
  2. Add all other ingredients and mix until well combined.
  3. Slab chickpea salad between two slices of bread and add your favorite toppings. I love tomato, cucumber, avocado and sprouts. Enjoy!
