Beginning the journey on a vegetarian or vegan diet can be very challenging for some, especially if they have no idea where to start. In last week’s tofu recipe I mentioned that the number one thing that vegetarians/vegans are always asked is “Where do you get your protein?” Well, for those that are new to this way of eating you’re going to become besties with beans.

Black beans, white beans, kidney beans, garbanzo beans, green beans.

Beans.

Beans.

Beans.

These legumes are an awesome source of protein and fiber AND are naturally gluten-free plus have loads of other vitamins and minerals.

They are super convenient to buy in cans. Just open and ready! But buying a million cans at a dollar a piece and start to add up. I personally prefer to buy my beans in dry form. They last FOREVER and are much much cheaper.

But how the hell do you cook dry beans?

Most recipes advise to first soak for a few hours, preferably overnight, then boil for like three hours….8 hours to cook up some beans??? NO THANK YOU!

I don’t know about you but I’m not into recipes that take for dayzzz.

I always recommend cooking beans in a crockpot or slow cooker. Since there’s no need to soak, it cuts the cooking time in half! And hey who doesn’t love forgetting things in the crockpot?!

The crockpot method is ridiculously easy AND you can be sure that the beans aren’t covered in a salt bath like most can varieties.

Once fully cooked, the beans will expand to about twice or three times their size in dried form, so keep that in mind when measuring out how much beans you want to make. One cup of dried beans will make about three cups cooked beans.

I like to make a big batch of them over the weekend or beginning of the week and keep them in the fridge so I can use them throughout the week!

How to Cook Beans in a Crockpot

Ingredients

  • 1 cup beans
  • 4 cups water or broth

Directions

Add beans. Add water. Cook on High for about 4 hours. Enjoy!
