All Mexican food is essentially the same four ingredients rearranged and called something different. Quesadilla? Tortilla, cheese, salsa. Tacos? Tortilla, meat, salsa. Tostada? Fried tortilla, meat, salsa. Essentially they are all the same thing. But despite it’s simplicity, one of my favorite Mexican breakfasts is entomatadas.

Entomatadas are again another combo of the Mexican basics: meat, cheese, tortilla and salsa, but somehow drowning tortillas in salsa just hits the spot!

These salsa smothered tortillas are a typical Mexican breakfast food and are typically served topped with meat, egg or cheese. (Sound familiar!?!) That’s all dandy, but I wanted to share with you a plant-based version and save yourself the cholesterol.

Instead of the usual meat and cheese (BORING!) I stuffed these babies with refried beans. Beans just keep creeping back into my diet lately. But, hey! I’m not complaining! Beans are such a good source of protein and fiber, they’re basically already a complete meal.

If you’re in search for some more fiber, honestly, take a look at black beans. You know the rhyme: the more you eat the more you….have regular bowel movements and a healthy digestive track…or something like that.

Anywho…back to those entomatadas!

The most important part to making delicious entomatadas is the SALSA. And lucky for you, I have a delicious recipe right here. They can either be made with salsa verde or a red salsa. A red salsa is more common but I always prefer the green. Try them with this red salsa and see which you prefer!

Bean Stuffed Entomatadas


  • 2 cups salsa verde
  • corn tortilas
  • 1 cup refried beans
  • thinly sliced onion
  • chopped cilantro


  1. Heat tortillas until very soft and can easily be folded without breaking. I prefer to use the microwave because it is the quickest and easiest; however if you prefer a more authentic flavor lightly fry them.
  2. Add about three tablespoons of beans to each tortilla and then fold them over.
  3. Cover tortillas in salsa making sure to get in between the folded tortillas.
  4. Top with onion and cilantro. Enjoy!
