Late night snacks are my arch nemesis. They’re my dirty little secret and the thing I love to hate. Unfortunately what most people tend to grab for late night snacks are packed full of sugar, salt and calories. I had to find some kind of middle ground to get these munchies in check without overthrowing all the of the progress I had made in my workouts that day. Then I figured out how; double chocolate chickpea cookies!

These protein packed cookies are PERFECT for upcoming Valentine’s Day. Give your sweetie a plate of these and they surely will never leave you (There is no guarantee behind this statement.) In case you’re unaware, I’m kind of a chickpea fanatic and didn’t realize it until recently. That is until I tried to make a dessert out of a bean.

Chickpeas or garbanzo beans are actually VERY nutritious so if there’s a food to be obsessed with, they might be a good option for you.

Chickpeas are rich in fiber which is awesome to help improve digestion and keep you regular. They’re also a great source of plant protein; as I’m sure you know that you need in order to form strong muscles and bones. Double Chocolate Chickpea Cookies

Double Chocolate Chickpea Cookies

Prep Time 10 minutes
Cook Time 15 minutes
Total Time 25 minutes
Servings 15 cookies

Ingredients

  • 1 1/2 cup Chickpeas cooked
  • 2 tbsp cocoa powder
  • 2 tbsp peanut butter
  • 2 tbsp honey or agave adjust to taste
  • 1/4 tsp salt
  • 1/2 cup semi-sweet chocolate chips

Instructions

  1. Add chickpeas to a blender or food processor and process until smooth. Add juice from chickpeas as needed 

  2. In a large mixing bowl, add all other ingredients to chickpeas and mix unit well incorporated.

  3. Grabbing about 1 tablespoon each, space the batter out onto a lined baking sheet.

  4. Bake at 350 degrees for about 15 minutes or until. Let cool completely before transferring.
