I’m all for spicing things up and a sad ol’ coleslaw was in desperate need of some sprucing! This pad thai veggie slaw is similar to your traditional coleslaw with shredded carrots and cabbage but instead of a lifeless watered-down mayo dressing, I’ve added a spicy peanut sauce dressing inspired by Asian flavors!

I’m lazy. There I said it. It’s true. I won’t deny it. I’m lazy and I’m proud!

That being said, when it comes to cooking at home, I’m EXTRA lazy. I’ve recently begun meal prepping on a weekly basis not because it keeps me organized and away from eating crappy food, (which is also true BTW) but I’m just lazy and this way only have to cook once a week instead of seven!

There’s also less dishes if that helps convince you. (Doing the dishes is my husband’s job because I hate it so much)

But once in a while I get SOO lazy that I don’t even meal prep for the week. GAAAHHH!!!

I hate myself afterwards because then I feel like I’m cooking all the time and it takes so much effort to eat. I have to cook a whole meal first before I can even eat it…ridiculous…

So in the chance that this happens, I lean towards super quick, easy recipes because ain’t nobody got time for cookin!

One of my favorites these past few weeks has been this Pad Thai Veggie Slaw. It’s FREAKING DELICIOUS! Who knew veggies could actually taste this awesome?

AND it’s so quick. Just shred veggies (or pulse them in a food processor to make it even faster. Or better yet, buy them already shredded!), add dressing and toss. That’s it!

I like to have a little more substance to my meals than just veggies so for a complete meal I add some quinoa and chickpeas for some extra carbs and protein.

This recipe is perfect for bulk batches for meal prepping or shindig BBQ’s. This ain’t your grandma’s coleslaw that’s for sure!

Pad Thai Slaw with Peanut Dressing

Prep Time 10 minutes
Cook Time 5 minutes
Total Time 15 minutes
Servings 4 (1 cup each)

Ingredients

  • 2 cups cabbage green, purple or mixed (shredded)
  • 1 carrot 1 cup shredded
  • 1/2 cup green onion thinly sliced
  • 1 red bell pepper finely diced
  • 1/2 cup cilantro thinly sliced

Peanut Dressing

  • 1 tbs peanut butter
  • 2 tbs soy sauce
  • 3/4 tsp ginger powder
  • 1 tsp sriracha sauce adjust to taste
  • crushed peanuts
  • Lime

Instructions

  1. Combine all slaw ingredients in a large bowl and set aside.

  2. In a small bowl, combine all peanut sauce ingredients. Whisk until smooth and well combined.

  3. Top with crushed peanuts and lime
