Before my husband and I made the big move a good friend of mine and I wanted to try out a newly discovered local cafe. The menu of the day didn’t sound as exciting as we had anticipated, but gave them the benefit of the doubt and decided to order it anyway.

It was a vegan/vegetarian café tucked between a meat shop and a corner store, Mini Mas. The entire restaurant was about the size of our apartment living room. The wooden tables were adorn with baskets stocked with books about natural healing, how to cook with specific vegetables, and healing the body with vitamins.

Our anticipated meal came on handmade ceramic stone plates. Pesto zucchini noodles was the first course. To be honest I didn’t expect much, but HOLY COW these noodles were good!

The zucchini noodles were tossed in an herbed pesto and chilled. Chilled? Of course! I had tried making zucchini noodles before and mixing with tomato sauces, but somehow they always turned more into a tomato soup. These were crisp and delicious, far from soupy.

I scarfed them down in about 2 minutes wanting more.

After trying these awesome noodles I couldn’t get them out of my head and had to make them for myself. This recipe is super simple but does require a spiralizer. I personally use THIS ONE and am in LOVE with how easy it is to use and clean!

Spiralize the zucchini and mix with all other ingredients. Easy peasy right??

This recipe makes a great side dish or make it a complete meal by adding some falafels to the mix!

And since it’s served chilled there’s no cooking involved which makes it perfect for those 90° summer weather days.

In Washington state 90° is HOT!!

Pesto Zucchini Noodle Salad

This quick salad is perfect for summer days when cooking just sounds like torture. Best served chilled and shared with your favorite friends!

Ingredients

  • 1/2 tbsp pesto
  • 1 zucchini
  • 1 cup cherry tomatoes
  • 2-3 tbsp feta cheese or other crumble cheese
  • 4-5 falafels
  • Avocado optional

Instructions

  1. Spiralize zucchini and set aside. 

  2. Cut tomatoes in half and set aside. 

  3. Mix zucchini, tomatoes and pesto together until well combined

  4. Top with feta cheese and falafels.

  5. Add avocado if using, serve chilled.
