Easy Shrimp Pico de Gallo

Shrimp pico de gallo is the perfect appetizer on a hot day. No cooking involved! The lime in this recipe helps to soften up already cooked and dried shrimp making it the perfect crunch to your summer cocktails.

This recipe is SUPER simple. Just dice up and mix together! If you want to make it even more straight forward, use a pre-made pico de gallo and just mix it in with the diced shrimp and lime.

Dried shrimp is not an ingredient I usually cook with so I did have to search around a bit to find it. Unless your local grocery store is fancy schmancy and already carries dried shrimp, you’ll most likely have to check out your nearest Asian market.

Then if you STILL can’t seem to find any you can always just buy these.

When picking out which shrimp to use there are a few kinds to choose from and it basically comes down to preference. They come in super teeny tiny which is going to give you that shrimp flavor but not a lot of crunch.

There’s also medium sized which will give you a little crunch and also take less time to soften up in the lime juice. But if you’re going for flavor and THE BEST shrimp pico de gallo ever, I’m going to recommend you grab the bigger size.

Again these will be diced up, so don’t be afraid. I like the big ones because I feel I get a better balance of crunch and dried shrimp meat. Even though they are a little bigger and may have the tails still on, you do not need to peel them. That’s what the lime is for!

The lime actually helps to soften up the shrimp and whatever tail or outer parts might still be on them. Be sure to add a good sprinkle of salt as well, as that will also help to soften them up so they blend perfectly in to the most amazing fresh appetizer or snack!

Easy Shrimp Pico de Gallo

  • 1 cup dried shrimp
  • 1 onion
  • 1-2 jalapenos
  • 2-4 roma tomatoes
  • Cilantro
  • about 1/4 cup lime juice or juice of 4 small limes
  • sea salt to taste
  1. Finely dice all ingredients and mix together in a medium bowl
  2. Stir in lime juice and salt. Then let sit for about 20 minutes.
  3. Add more lime juice as needed to help soften the dried shrimp. Serve cold with tostadas or tortilla chips.
