Pineapple Chickpea Stir Fry
For the past few months I have been taking exercise a little more seriously. I have been trying to keep to the same schedule every day and have yet missed a day. Woohoo! Go me! But along with my new exercise routine has come with some serious hunger. I’ve also been researching what is the quickest way to build more muscle to burn more fat and hands down the most popular suggestion is to fill your body with protein to sprout those muscles.
Mass media has done a pretty good job of brainwashing it’s public into believing that you need to eat meat in order to get enough protein and be healthy. I don’t mean to point fingers BUT….that’s kind of a BIG FAT LIE!
Yes, its important that you eat enough protein but it doesn’t necessarily have to come from animals. And if we’re being frank, it probably shouldn’t
I usually don’t pay too much to my protein intake, but since my exercise routine I’ve been focusing a lot more. Tons of beans and rice. Potatoes. More beans. And greens to get that iron. (Thanks Popeye!)
So far so good! Not sick of beans yet especially with some of the tasty recipes I’ve been whipping up.
I’m already a fan of stir fry but to add in the extra protein I added some extra chickpeas. And guess what!?!…
The extra chickpeas to my usual veggie stir fry do a great job of adding a little extra protein and scare away my monstrous size hunger.
And just because….PINEAPPLE.
I love the added pineapple in this stir fry because it helps add a sweetness without processed sugars which balances out the spice (if you decide to add it). All natural flavors baby!
One of the best things about stir frys, other than being filled with veggies, they are SUPER quick! This dish literally took me about 15 minutes to make. That’s not even half an episode of my current Netflix obsession!
I’m telling you, if you’re looking for a way to sneak in more plant protein this pineapple chickpea stir fry is the way to go.

Pineapple Chickpea Stir Fry
- 1/2 red bell pepper chopped
- 1/2 onion chopped
- 1 cup green beans chopped
- 2-3 tbs minced garlic
- 1 inch ginger minced
- 1 cup cooked chickpeas
- 3/4 cup pineapple
- 1/4 cup soy sauce
- 1/4 cup pineapple juice
- 1 tbs cornstarch
- 1 tsp sriracha
- Add pepper onion and green beans to a large skillet pan over and cook over medium heat. After about five minutes add garlic and ginger.
- Once veggies have soften add chickpeas and pineapple to skillet and cook for a few more minutes.
- Meanwhile, in a small bowl combine all remaining ingredients and stir until well combined.
- Add sauce to skillet, being sure to mix well until evenly coated. Continue to occasionally stir until sauce thickens.
- Enjoy alone, in a wrap or over rice!
